Ingredients
  

  • 1 cup ooked carnitas (leftovers or freshly made)
  • 2 large eggs
  • 1 tablespoon olive oil (or butter)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • 1 avocado, sliced (optional)
  • Salsa or hot sauce, for serving (optional)
  • Shredded cheese (cheddar or cotija, optional)

Instructions
 

  • Heat a skillet over medium heat and warm the carnitas until crispy and heated through, about 5-7 minutes.
  • In a bowl, whisk together eggs, salt, and pepper.
  • In a separate pan, heat the olive oil and scramble or cook eggs to your desired doneness.
  • Plate the warm carnitas and top with cooked eggs.
  • Garnish with cilantro, avocado, cheese, and salsa.
