Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 can diced tomatoes 14.5 oz
  • 1 teaspoon chili flakes
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Cook chicken in olive oil, seasoned with salt, pepper, and paprika. Shred once cooked.
  • Sauté onions, garlic, and bell peppers in the same pot.
  • Add rice, chili flakes, cayenne, and paprika. Stir to coat.
  • Add chicken broth and diced tomatoes, then simmer for 15 minutes.
  • Stir in shredded chicken and let everything heat through.
  • Taste and adjust seasoning. Garnish with cilantro.
