Instructions
 

Preheat and Prep:

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

Make the Streusel Topping:

  • In a small bowl, combine the rolled oats, flour, brown sugar, and cinnamon. Add the cold, cubed butter and mix with your fingers until the mixture resembles coarse crumbs. Set aside.

Prepare the Cake Batter:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the softened butter, sour cream, eggs, and vanilla extract. Mix until just combined—be careful not to overmix!

Assemble and Bake:

  • Pour the batter into the prepared pan and spread it evenly. Sprinkle the oatmeal streusel topping over the batter, covering it completely. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
