  • 9x13 inch baking pan
  • Rubber spatula
  • Cooling rack

Ingredients

  • 2 cups kefir
  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 2 large eggs
  • ½ cup melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x13 pan.

  • Pour into pan and bake for 30-35 minutes.

Notes

  • Kefir Substitute: If you don’t have kefir, plain yogurt works as a substitute, but the tanginess may be less pronounced.
  • Mixing Tip: Overmixing the batter can result in a dense cake. Stir just until the ingredients are combined.
  • Storage: Store the cake in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
  • Topping Ideas: A dusting of powdered sugar, cream cheese frosting, or a drizzle of honey pairs wonderfully with this cake.
  • Add-Ins: Try adding citrus zest or a handful of chopped nuts to the batter for extra texture and flavor.
