Ingredients
  

  • 1 lb fresh king crab meat
  • 2 cups heavy cream
  • 4 large egg yolks
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Salt and white pepper to taste
  • Additional sugar for caramelizing

Instructions
 

  • Preheat oven to 300°F (150°C)
  • Gently pick through crab meat, removing any shells
  • Whisk egg yolks with sugar until pale
  • Heat cream until just simmering
  • Slowly temper egg mixture with hot cream
  • Fold in crab meat
  • Strain mixture into ramekins
  • Bake in water bath for 25-30 minutes
  • Chill completely
  • Sprinkle sugar on top
  • Torch until golden and crisp

Notes

  • Use the freshest crab possible
  • Don't overwork the crab meat
  • Chill thoroughly before caramelizing
