heavy cream

large egg yolks

granulated sugar

Additional sugar for caramelizing
Instructions
Preheat oven to 300°F (150°C)
Gently pick through crab meat, removing any shells
Whisk egg yolks with sugar until pale
Heat cream until just simmering
Slowly temper egg mixture with hot cream
Fold in crab meat
Strain mixture into ramekins
Bake in water bath for 25-30 minutes
Chill completely
Sprinkle sugar on top
Torch until golden and crisp
