Ingredients
  

  • 3-4 lbs beef arm roast
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 2 cups beef broth
  • 1 cup dry red wine optional
  • 4 large carrots peeled and cut into chunks
  • 4 celery stalks chopped
  • 1 large yellow onion sliced
  • 4 garlic cloves minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions
 

  • Preheat oven to 325°F (163°C).
  • Pat the roast dry and coat it evenly with the seasoning mixture.
  • Sear the roast in olive oil until golden-brown on all sides.
  • Sauté carrots, celery, onion, and garlic in the same pot.
  • Deglaze with beef broth and red wine.
  • Return the roast to the pot, add herbs, and cover.
  • Braise in the oven for 3-4 hours until tender.
  • Rest for 15 minutes before slicing and serving.
